Proof Cocktails and Lounge is coming to 801 Washington Street in downtown Vancouver, with co-owners Nick Rasmussen, Andrew, and Carla Myers confirming to What Now Portland that an opening is targeted for August or early September. The new two-sided concept will bring a hospitality-forward cocktail bar and full-service restaurant to one of Clark County’s most active commercial corridors, with a collection of over 2,000 whiskeys and spirits that Andrew says will be one of the most extensive in the region.
The vision the three owners keep coming back to is one word: hospitality. Not just good service, but the kind of place where people feel genuinely taken care of from the moment they walk in. The food program will include 20 curated items from an executive chef, covering steaks, pork chops, chicken, burgers, elevated bar bites, cheese boards, salads, and desserts, all priced to be accessible.
The spirits program is where Proof really separates itself. While the bar will sell rare and high-end bottles for serious collectors, Andrew Myers was clear that there will be options at every price point, this is a conscious effort to make a world-class whiskey collection feel inviting rather than intimidating.
“We wanna have things that are really of high value at that lower price point, but we’re also gonna have some things that are extremely rare at that higher price point,” Myers told What Now. “Something for everybody.”
Whether it’s a casual date night, a personal conversation over drinks, or a large private party, Proof Cocktails and Lounge is looking like the space that can handle it all.
