Fork to Fit Kitchen is preparing to expand its footprint in the San Antonio area with a new location planned for Schertz Station Bldg. 7A at 18406 IH 35 N, Suite 600, according to project filings with the Texas Department of Licensing and Regulation.
The concept, which blends a quick-service restaurant model with a retail-style grab-and-go experience, will serve macro-balanced, calorie-portioned meal prep dishes alongside bar-style drinks such as coffees, protein shakes, juice blends, and acai bowls.
While speaking to WhatNow San Antonio co-franchise owners Alex Velasco and Jose Guerra, they shared more details about the brand as a hybrid between retail and dining, designed around convenience, freshness, and accessibility.
“Our concept is a mix of a retail model and a quick service restaurant,” Velasco said, who told the publication. “We offer macro-balanced, calorie portioned meal preps and other goods like coffees, protein shakes, juice blends, and acai bowls.”
Customers will be able to browse more than 40 meal-prep options in-store, with food prepared fresh in commissary kitchens and delivered multiple times per week to ensure consistency and freshness.
The menu spans breakfast, poultry, red meat, seafood, salads, and more, with signature items including chicken enchiladas and buffalo chicken cheese pasta.
Guerra said the brand is focused on serving “everyday doers,” including teachers, students, healthcare workers, government employees, and other working professionals looking for quick, healthy meal options.
“We serve all types of people from government officials to teachers, doctors, nurses, and students, anyone who needs a quick, healthy meal,” Velasco added.
The Schertz location represents the company’s second entry into the San Antonio market, with another site expected to open in the coming months.
Construction is expected to move forward once permitting is approved, with build-out timelines projected at 60 to 90 days. The team also indicated that the project is progressing through permitting, with equipment already being secured and franchise support in place.
Looking ahead, the brand sees significant growth potential in the region, with plans for additional locations in the pipeline.
“There could be another five to ten locations coming in the next year to year and a half,” the team said.
The Schertz project remains in the permitting phase, with an opening timeline expected to follow construction completion.
