Takumi Sushi is preparing to open in mid-August at 2709 17th Ave. S., Suite A, inside the Colina Apartments in Seattle’s Beacon Hill neighborhood, according to a license application filed with the Washington State Liquor and Cannabis Board.
The restaurant marks Evan Xu’s first business after serving in the U.S. Army. Following his military service, he spent more than 12 years working as a sushi chef before deciding to open a restaurant of his own.
“After the service, I wanted to start my own business. We’re serving fresh fish, signature rolls, and authentic Japanese cuisine,” Xu said. Alongside traditional Japanese dishes, the menu will also include sake, Japanese beer, and other beverages.
Xu said he spent considerable time searching for the right location before choosing Beacon Hill.
“It’s a very good neighborhood. I’ve been looking around Seattle, and I really wanted to start my business in the city,” he said.
The restaurant is expected to seat between 30 and 40 guests, with plans to add outdoor patio seating. Xu said his goal is to create a welcoming neighborhood destination centered on fresh ingredients and attentive service.
