Fast-casual diners are increasingly demanding healthier options. Fortunately for DC foodies, a growing chain called Springbone Kitchen is prepared to provide nutritious cuisine on the quick. The New York-based concept is planning a location near Dupont Circle, reports the Washington Business Journal.
Ownership has not yet announced the precise location of the intended storefront, however despite this ambiguity the restaurant could be open and feeding hungry District residents as early as late summer or early autumn.
Springbone Kitchen co-founder Sam Eckstein believes that DMV foodies demand similar quality from their eateries as New Yorkers, making the chain a perfect fit for the region. He states: “I think the customer in New York and the customer in D.C. are very similar in the kinds of work people are doing, the kinds of tastes, and what we’re doing here will definitely translate.”
Springbone Kitchen first entered the fast-casual dining scene in 2016 with the admirable goal of offering simple, straightforward, but delicious options in a market lacking them. The menu features a selection of broths, bowls, soups, and desserts.
