A restaurant featuring Korean fusion street tacos is one of several concepts opening in Aurora’s anticipated food hall, Parkside Eatery. Taco Choi will join Gina’s Kitchen and Lucky Bird at the new development, according to a Denver Business Journal article.
Taco Choi features a variety of Korean BBQ tacos including the Elise with thin slices of pork marinated in a sweet and spicy chili sauce and then grilled, and the Annabelle, which is marinated chicken that’s grilled over an open fire. You can also try the sweet corn or quesadillas and wash it all down with a lemonade or limeade, infused with matcha powder. Taco Choi started as food truck and also provides catering options.
The new Parkside Eatery will offer “a unique and interesting alternative to the ‘typical’ suburban food & beverage experience by combining multiple food & beverage concepts and a central bar in a collective setting,” stated the Parkside at City Center website.
The comfortable environment of the Parkside Eatery will showcase work from local artists along with several culinary concepts. There’s no word on when Taco Choi will open at 14515 E. Alameda Ave., Ste. C, Aurora CO 80012.
