Perseid To Illuminate The New Hotel Saint Augustine

Chef Aaron Bludorn’s latest culinary concept is set to dazzle Houston’s Montrose neighborhood this fall.

Austin-based Bunkhouse hospitality group, renowned for its unique boutique hotels, has partnered with acclaimed Chef Aaron Bludorn to launch Perseid, an all-day restaurant that promises to be a vibrant addition to Houston’s dynamic food scene. Situated in the heart of Montrose, Perseid will not only offer a diverse menu but also enhance the overall dining experience at Hotel Saint Augustine, located at 4110 Loretto Dr.

“Hotel Saint Augustine’s ownership, along with Bunkhouse, approached us to collaborate on the hotel’s restaurant and overall food & beverage program,” said Chef Aaron Bludorn. This partnership marks Bludorn’s fourth venture, following the successes of Bludorn, Navy Blue, and Bar Bludorn, and reflects his commitment to creating meaningful culinary experiences.

Perseid, named after the annual Perseid meteor shower, aims to honor Houston’s rich history in space exploration. Erin Lindsey, VP of Brand + Community at Bunkhouse, explained, “In naming this restaurant, we wanted to honor Houston’s long history as an epicenter of space exploration, and with this annual meteor shower peaking in August, it just felt perfect with the additional tie into the hotel’s name.”

Under the direction of Chef Bludorn and Director of Operations, Cherif Mbodji, Perseid will offer a menu that blends refined comfort with classic technique, emphasizing bold flavors influenced by Houston’s diverse culinary landscape. The beverage program will feature a mix of classic and inventive cocktails inspired by the Montrose neighborhood, along with a curated selection of French and eclectic wines.

Designed by Post Company, Perseid’s interior will reflect a surrealist landscape that nods to Houston’s artistic and cultural heritage. The restaurant will be a vibrant space with ombre dipped wall treatments and abstract murals, creating an intimate yet eclectic ambiance.

As Hotel Saint Augustine opens its doors in Fall 2024, Perseid is set to become a culinary landmark, offering breakfast, lunch, dinner, and weekend brunch. “We always keep an open mind and look to the future. If an opportunity seems like a good fit for the brand, we are certainly willing to explore it further,” said Bludorn, hinting at potential future expansions.

Perseid will undoubtedly shine brightly in Houston’s culinary galaxy, providing a stellar dining experience that reflects the city’s rich cultural tapestry and culinary innovation.
