Saint Honore Bakery is set to open a new location in the Macadam area, located at 6565 S Macadam Ave, according to a recent permit filing.

A representative of Saint Honore Bakery did not immediately respond to What Now Portland’s request for comment.

While an official opening date has yet to be confirmed, the boulangerie’s interior reflects its dedication to merging French traditions with the Pacific Northwest vibe. Wicker baskets brimming with artisanal bread line the shelves, while a glass-encased display showcases meticulously hand-crafted pastries.

Dominique Geulin, the visionary behind Saint Honoré Bakery, explains, “We wanted to create an environment where customers could witness the art of bread-making firsthand. That’s why everything is out in the open, allowing people to engage with our bakers as they work their magic.” Bathed in natural light streaming through floor-to-ceiling windows, the bakery offers a welcoming atmosphere that encourages connection and conversation.

Dominique’s passion for baking began in the coastal town of Etretat, located in Normandy, France. Growing up above his family’s bakery, he absorbed the secrets of traditional baking from his father, laying the foundation for his future culinary endeavors. Pursuing his dream, Dominique studied at the prestigious French National Bread Baking and Pastry Institute, where he honed his skills to perfection.

In 2003, Dominique returned to the United States and fulfilled his lifelong dream of establishing Saint Honoré Boulangerie in Portland. Recognized for his contributions to the culinary arts, Dominique was awarded the esteemed medal of Chevalier dans l’Ordre du Mérite Agricole (Knight in the Order of Agricultural Merit) by the French National Ministry of Agriculture in May 2016. Today, he proudly serves as the Honorary Consul of France, offering support and assistance to French citizens in the state of Oregon, according to the company website.
