A fresh, health-conscious ramen spot is making its way to Arlington.
Local entrepreneur Kelly Babb will soon launch Mi So Happy at 11925 US-70. A longtime Arlington resident and the owner of a local fitness facility, Babb is eager to bring something special to the community she calls home.
Mi So Happy is inspired by Babb’s Vietnamese heritage and her passion for travel and global flavors. “I enjoy cooking and love all different ethnic foods, so I wanted to go back to my roots and provide something that was very sentimental to me,” Babb told What Now Memphis.
The menu will feature five distinct ramen bowls—Vietnamese, Thai, Korean, Japanese, and vegetarian options—alongside a variety of Thai dishes, all crafted with a focus on clean, fresh ingredients and vibrant Asian flavors. “It’s going to be different from what you’d find at most ramen restaurants,” Babb explained. “Many of them are primarily Japanese-based, but our flavors will highlight different countries.”
Chef Annie Griesenbeck of Annie’s Thai Kitchen—known for her authentic, vibrant flavors—will lead the kitchen. “When I met Annie and tried her food, I thought, ‘Oh, we have to do something,’” Babb recalls. “I’m very excited about giving people the opportunity to taste her food.”
The restaurant’s atmosphere will be casual and uplifting, designed to spread joy and positivity. Adding to the wholesome experience, Babb eventually plans to introduce a “Mi So Happy Meal” for kids.
As a mother of four busy children, she understands the challenge of providing healthy meals in today’s fast-paced world. “I’ve just seen so many families struggle with feeding their kids in a way that helps them to perform not only mentally but also physically. I want to be able to provide healthier, cleaner options.”
Mi So Happy is awaiting a few final inspections before announcing an official opening date, but Babb looks forward to welcoming the community in the coming weeks. “Our mission is to bring joy through food,” she said.
