New Restaurant Concept Expected for 16th Street Mall

A new Asian-inspired restaurant appears to be in the works for local restaurateur Edwin Zoe, the owner behind Chimera Ramen and Zoe Ma Ma.

According to a permit application filed with the city of Denver, Dragonfly Noodle will replace the space once occupied by Garbanzo Mediterranean Fresh at 1350 16th Street, Denver, CO 80202.

The interior space of the location at Downtown Denver’s 16th Street Mall will be renovated including new equipment and seating, but there’s no word yet on when Dragonfly Noodle will open to the public.

Zoe opened the first Zoe Ma Ma restaurant in Boulder, alongside his mother Anna, followed by a second location at Union Station in 2014. Several years later, he opened Chimera, which offers house-made noodles.

Zoe also serves as CEO for the Good Business Colorado Association, which is a grassroots group of area businesses that works to build a thriving economy, a safe and equitable community, and a sustainable environment that preserves local heritage.
