A gourmet restaurant combining Vietnamese and French cuisine will open in the first-floor space of a new office building at 255 Fillmore St. in Denver. Last month, developers broke ground on the seven-story project that will house Le Colonial.
The 255 Fillmore St. project is being developed by Denver-based BMC Investments and is expected to be completed in about 15 months.
Le Colonial will feature upscale cuisine for diners. The menu includes a variety of dishes including small and large plates, soups and salads, and shareable sides. Le Colonial also features an extensive wine list.
The team behind Le Colonial includes founder Rick Wahlstedt and restaurateur Joe King. Le Colonial first opened in New York in 1993 and now has locations in Atlanta, Chicago, and Houston.
