Mercantile Dining & Provision, a longtime staple of Denver’s Union Station, will be reopening after spending the last few weeks doing unspecified work on the concept. Posts from the restaurant, located inside the 1701 Wynkoop St. travel hub, show that it paused operations in early January for a refresh.
A press release announced it will now offer four seasonal menus throughout the year, with daily specials, courtesy of Executive Chef Alex Grenier. For lunch, the establishment will offer counter service and a dining room with a two-course prix fixe menu with options like Roasted Broccoli Caesar, Kvaroy Salmon, and Fried Chicken Bánh Mì. Dinner dishes will take inspiration from “earth, sea, grain, and pasture” and the bar will offer small plates and drinks. Weekend brunch will roll out by summer.
Mercantile has a reputation as one of Denver’s top dining destinations for its farm-to-table ethos. Its website shows it has previously earned accolades such as a 2023 Michelin Guide recommendation and recognition from The New York Times, Zagat, and TripAdvisor Travelers’ Choice.
The restaurant, originally founded by James Beard Award-winning Chef Alex Seidel, is now owned and operated by Sage Hospitality Group, Westword reports. The Denver-based leader in restaurant management operates a portfolio of over 50 restaurants, bars, and entertainment venues.
