According to a recent permit filing, Watts Brewing Co. will be opening in Woodinville at 15510 Woodinville-Redmond Road NE Unit E, STE 110A.
“Our grand opening is scheduled soon, pending final approval processes,” Evan Watts, the founder and owner of Watts Brewing, told What Now Seattle.
“Our award-winning beers—including The Leafcutter, the Apian IPA series, and Xylocopa—are of course the highlight of the taproom experience. Our taproom design was inspired by the Watts family’s history of raising bees for commercial pollination, with slices of leafcutter bee boards used on the pillars and tables in the taproom.”
“In addition to the main taproom area, we also have an extended seating area back by the brewery area where you can see the tanks, and an outdoor bee(r) garden with flowers that support our native pollinators. Our grand opening party will feature special kegs from the Solitary Series that we’ve been cellaring for the occasion, as well as a pig roast by Woodinville Cut Shop,” he added.
Evan’s voyage into the realm of brewing began with a turkey fryer and a driveway, where he took his first tentative steps into the world of crafting beer. Evan’s maiden brew, as described by the company website, was just “okay.” However, rather than being disheartened by the less-than-perfect outcome, Evan’s passion for brewing only grew stronger. He embarked on a journey of continuous improvement, brewing batch after batch, each a step closer to perfection.
Over the course of several years and countless batches of beer, Evan honed his craft. His dedication was such that he subjected his creations to exhaustive product testing, using unsuspecting family members, friends, and colleagues as willing taste testers. As his skills matured, the second-hand, Frankenstein brewing kit he started with eventually gave way to a custom-built 1 bbl brewhouse.
