Midnite Ramen Will Soon Open Its First Brick-and-Mortar

The ramen 'yatai' or ramen food cart started as early as the 1900s in Japan, according to Midnite's website.

According to a recent article from the Seattle Eater, Midnite Ramen will soon open a brick-and-mortar at 3513 Stone Way.

A representative from Midnite Ramen was not immediately available for commentary upon What Now Seattle’s request.

Midnite Ramen‘s new location will be opening at and alongside Figurehead Brewing’s new Wallingford location. Bob Monroe, one of the co-owners, CEO, and Head Brewer of Figurehead stated, “Our target right now is late February. We’re amid a pretty large build-out so it is a bit of a moving target until we get closer.”

“Our goal is to create a casual atmosphere for everyone in the neighborhood to hang out regularly. The space will feature a roughly 60-seat taproom and 35-seat outdoor patio operated by Figurehead. Then in the back will be a food trailer and commercial kitchen operated by Midnite Ramen, and Ooshiba Sushi and Yakitori.”

“Midnite Ramen and Ooshiba will offer a selection of Japanese comfort foods such as ramen, sushi, yakitori, and gyoza. One of the things that sold us on the space was the interior courtyard which we plan to turn into a “secret” urban oasis,” Bob added.

Elmer Komagata, one of the two people behind Midnite, stated in the Portland Eater article, “We’ve been fortunate to have been loved by many the last three and a half years, but the limitation of the cart is that we can only provide 120 bowls of ramen each day,” says chef Elmer Komagata.”

“It pains us to see customers having to wait long periods, especially in bad weather, but the new location will alleviate that pain.” Komagata, who has operated the cart as a two-person show with his wife Izumi, foresees having a staff of 10 people providing lunch and dinner service seven days per week.”
