Western Dining Experience Emerging in Elbert

The family behind Panino’s Restaurant, a beloved local favorite in Colorado Springs, will be opening another eatery in Elbert. Called Buck & Blue’s Grill, the business is gearing up to open at Latigo Trails Equestrian Center, 13710 Halleluiah Trail, its sister company announced.

Its the latest venture from AJ and Maggie Frasca, who are the third-generation owners of the popular Panino’s chain. His grandparents opened the first location in downtown Colorado Springs in the 70s, and over the decades the business expanded to Fort Collins, the West Side, and an East Side location (which the Gazette reports closed in 2022.)

The upcoming eatery’s website explains that AJ’s involvement with the Pikes Peak Range Riders inspired the concept. A Western-themed restaurant, it promises great food in a unique atmosphere. There will be an upstairs arena window that overlooks equestrian events and outdoor seating with breathtaking views of Pikes Peak.

Operating hours for the business will be from 4 PM to 8 PM on Wednesday and Thursday, extending to 9 PM on Friday. Saturday hours will be from 7 AM to 9 PM and Sunday hours from 7 AM to 8 PM. Buck & Blue’s Grill is currently hiring for multiple positions, including a general manager, front-of-house staff, bartenders, and kitchen staff.
