Poulette Bakeshop, one of Colorado’s most celebrated bakeries and a 2025 James Beard Award finalist, is moving to a larger, high-profile space in Downtown Parker. Denver Post announced that the concept will transfer operations from its current spot on Hess Road to a new development at 19865 Mainstreet.
The business will open at The Juniper, a newly built 264-unit luxury apartment building that just started leasing. A 2,800-square-foot space, it is the first confirmed retail tenant at the property, which is a joint project by MGL Partners and the Rockefeller Group, Mile High CRE reports.
It is expected to welcome guests in the fall. Poulette will also continue operations in some capacity at its current shop until the lease end-date in 2016, but more info on that will come at a later time.
Known for French pastries like kouign-amann, maple walnut tarts, and cheese danishes, Poulette Bakeshop rose to national fame thanks to its refined approach to European-style baking. The New York Times recently named Poulette one of the “22 Best Independent Bakeries in the U.S.” last year.
Founders Carolyn Nugent and Alen Ramos are a husband-and-wife duo whose backgrounds span some of the world’s most revered kitchens. They were trained under legendary chefs including Pierre Hermé and the late Joël Robuchon, and founded the bakery in 2021 after relocating to Colorado.
