Hudson Street Hospitality Bringing Dandelion To West Village This Fall

Hudson Street Hospitality has a new concept on the way to West Village. Dandelion will open at 115 Christopher Street.

The spot will serve as a cocktail bar and restaurant, designed to “embody all the beauty and culture of the West Village,” according to a recent announcement from Hudson Street Hospitality founder Eytan Sugarman. Hudson Street Hospitality managing partner Shaun Rose has been developing the project for more than a year, and Will Makris of Makris Hospitality is also a partner in the venture.

Dandelion derives its name from the French dents-de-lion, meaning ‘lion’s teeth.’ The restaurant’s website indicates that they chose the name because dandelions, often dismissed as weeds, symbolize hope, healing, resilience and survival.

“We are all so excited to finally bring this vision to reality after all this time,” Sugarman wrote in his announcement. “More has gone into it than I can express. I know it will all be worth it. This one will be special.”

In a phone call with What Now New York, Sugarman shared that they are more than a month out from opening but declined to share further details on menu and design. He plans to release more information closer to opening.

Hudson Street Hospitality is also behind concepts like White Horse Tavern, Ambra and Bar Sella. Sugarman also is a partner in the Hunt & Fish Club and Made in New York Pizza.
