Slim Chickens to Open Location in Round Rock

Slim Chickens will open its first Greater Austin area location by fall 2026.

Slim Chickens is coming to Williamson County! According to a permit filed with the Texas Department of Licensing and Regulation, the chicken joint is expected to open doors at 2700 Red Bud Ln.

Construction on the Slim Chickens is planned to start in December and wrap up in July 2026. According to Yelp, the location once housed Zaxby’s, which many customers report as now closed. No word on why this Zaxby’s on Red Bud Lane shut its doors, but Slim Chickens is expected to open doors at the location by next fall.

This Slim Chickens is expected to be run by the owner of the “Big Star Chicken” franchise, Dan McGrath. McGrath is the president of the Slim Chickens franchise group and a franchisee. The franchisee has opened a plethora of the 291 Slim Chickens restaurants throughout several states in the country. Slim Chickens first opened in 2003 in Fayetteville, Arkansas, and was founded by Tom Gordon and Greg Smart.

According to the website, Slim Chickens’ mission was, and still is, simple.

“To make the best hand-breaded chicken tenders using only the freshest ingredients, served in a friendly atmosphere where people can relax and feel at home,” the website reads.

The eatery, from the beginning, has bread, fried, and dished out 100% all-natural premium tenders. Served up on sandwiches, salads, wraps, mac bowls, and more, the chicken tender has been the bedrock of the fast food chain’s growth.

There’s no official opening date for the new Williamson County Slim Chickens. Austinites can try Slim Chickens themselves when the 2700 Red Bud Ln. location opens its doors in the fall of 2026.
