A beloved local institution in Pueblo is preparing for a comeback. Black Swan, the historic Chinese-American restaurant that served the community for over 60 years, is set to reopen in a new location, according to posts from the business. It will return to the city’s dining scene at the Fuel & Iron Food Hall in downtown Pueblo — 400 S Union Avenue.
The Black Swan story began when Jane and Phillip Wong immigrated from China and opened the restaurant in 1962. Following Phillip’s passing in 1974, Jane and her daughter Penny maintained the restaurant, moving it to 7th and Main Street after a fire in the 80s. Before it closed in 2023, it was voted a Neighborhood Favorite on NextDoor several times.
But now the eatery is back, courtesy of Jane’s grandson, Tyler Schulz. He grew up helping around the restaurant and earned a degree in Hospitality Management from Colorado State University in 2016. With extensive experience in the industry, he has worked at establishments ranging from Red Robin and Twisted Noodle to the Marriott Hotel and Harmony Bowl.
“I genuinely can’t wait to resume and honor my family’s (especially my grandma’s) legacy restaurant by serving my hometown community of Pueblo with something exciting and new, and as it becomes successful, I will be able to honor all the traditions that got me here,” he told What Now Denver.
For now, Black Swan will focus on Chinese cuisine, including a new signature dish: the “Chinachanga, rice, protein, and vegetables wrapped in a giant, fried eggroll. Due to space restrictions, the restaurant has to pause serving its famed fried chicken, but there are plans to bring it back in the future. The operating hours at the new location will be 11 a.m. to 9 p.m. Monday through Saturday, and 11 a.m. to 8 p.m. on Sundays.
