A New Mexican Eatery Set to Debut in Olympia

Rica Cocina will serve tacos, burritos, enchiladas, fajitas and house-made salsas.

A vibrant new Mexican eatery is set to open in Olympia.

Rica Cocina, operated by Abhishek Kaushal along with Maria, Mukesh and Radha Singh, is set to debut at 111 Columbia St., according to business filings.

The Washington State Liquor and Cannabis Board recently approved the restaurant’s liquor license.

“We’ll be serving authentic Mexican food made with fresh ingredients, including tacos, burritos, enchiladas, fajitas, and house-made salsas. Our goal is to bring bold flavors, generous portions, and a welcoming atmosphere to the community,” the Rica Cocina team shared via Google Overview.

An official opening date has not been announced, but signage shared by The South Sound reads, “Rica Cocina, Sabor Mexicano, Coming Soon!” And, Google lists the restaurant for April.

Rica Cocina will take over the space formerly occupied by Chicory, which announced in October of last year that it would close in December.

“Chicory as we know it will cease to exist, but we are committed to remaining a part of the Olympia community and food system. THIS IS NOT THE END FOR US!” the owners shared via Instagram.
