Rebelle, a new ice cream brand from Gatineau-based Laiterie de l’Outaouais, is launching its first scoop shop at Épicerie Saveur urbaine in downtown Hull at 45 rue Laval, Gatineau.
The company’s first scoop shop officially opened on May 21, according to CEO Yannick Bouchard, with a second location planned within La Buena breakfast restaurant at 1160 boulevard Saint-Joseph in Gatineau’s Hull sector. Bouchard tells Whatnow Montreal that the La Buena location is expected to open within three weeks. The expansion follows the retail launch of Rebelle ice cream on June 1 across grocery and retail partners throughout the Outaouais and Ottawa regions.
The scoop shops mark a major step for Laiterie de l’Outaouais, which is entering the ice cream category for the first time in its 16-year history. The company developed the Rebelle line over four years following a facility expansion supported by federal and provincial funding. The brand debuted with four flavours including iced cappuccino, funky, chocolate, and vanilla.
Founded in Gatineau and headquartered at 275 chemin Industriel, Laiterie de l’Outaouais has traditionally focused on milk production and dairy distribution across the region. The introduction of Rebelle represents its first move beyond core dairy products, with plans to build a broader frozen dessert business.
Rebelle products are currently available at major grocery retailers including IGA, Maxi, Provigo, Metro, Walmart locations in the Outaouais and select Ottawa stores, Farm Boy, select Your Independent Grocer locations, and Épicerie Saveur urbaine. Additional retail partnerships are still being finalized ahead of continued rollout.
If the scoop shop concept proves successful, the company plans to expand into a regional franchise network by 2027. Future development may also include a hyperlocal ice cream line made with fruit grown and processed on-site, depending on the completion of a planned “Flavour Kitchen” facility later this year.
