Chez Stanley, a restaurant-bar overlooking Mount Orford in Sherbrooke at 1180 Rue King E, is currently undergoing a full rebuild after a fire damaged the building in September 2025.
The fire, which started in the kitchen, was confirmed by the Sherbrooke Police Service as accidental, caused by a stove burner that was inadvertently left on. Due to extensive smoke and water damage, the entire interior of the restaurant must be completely rebuilt. The reopening, initially expected in the fall, has now been delayed past October due to supply and equipment issues, with a new target set for late 2026, according to Radio-Canada.
The multi-million-dollar reconstruction project includes a complete redesign of the space. Co-owner Luc Laplante says the rebuilt restaurant will be larger than before and will feature a second floor. The updated layout will also include a redesigned bar area and an improved live music space, along with new wood paneling throughout the interior.
While the restaurant is being rebuilt at the same location, it will continue to highlight its view of Mount Orford once it reopens. Laplante noted that the team is aiming to bring back former employees, with a major hiring push planned around December ahead of the reopening. He also expressed disappointment over the closure, pointing to the restaurant’s role as a popular gathering place for local sports fans.
The redesign is intended to modernize Chez Stanley while maintaining its identity as a social hub in Sherbrooke. Once complete, the expanded layout is expected to support larger crowds and a more flexible event and entertainment setup.
