Colorado Springs is getting its first taste of Homegrown Tap & Dough this fall, bringing the Colorado-born restaurant concept to the northeast side of the city.
The new restaurant is planned for 5710 S. Carefree Circle, near North Powers Boulevard and South Carefree Circle, and will mark the seventh Homegrown location for Denver-based Gastamo Group.
The restaurant is putting a distinctly Colorado Springs touch on the new space, including a custom American flag art installation created by Colorado fine artist Dolan Geiman. The piece will incorporate authentic military memorabilia donated by families in Colorado Springs and across the country.
“Opening our first restaurant in Colorado Springs is an exciting step for us,” said Peter Newlin, CEO of Gastamo Group. “This is a community with a deep commitment to service, and we wanted that to show up in the restaurant itself, not just the neighborhood around it.”
The installation is one of several design elements planned for the restaurant that connect the space to Colorado’s history and outdoor culture.
Homegrown will feature a custom mural, a signature element of the restaurant brand, along with a ski patrol gondola and vintage Tenth Mountain Division skis. The World War II-era Army division trained in Colorado’s high country and has a longstanding connection to the state.
The approximately 6,000-square-foot restaurant will have 215 seats indoors and another 106 seats on the patio. A vintage arcade sourced by Chattanooga Pinball and a kids’ bocce court will add to the family-friendly setup.
The restaurant has been about three years in the making and is undergoing a complete renovation of the former space ahead of its opening.
On the menu, Homegrown is known for hand-tossed pizzas, pasta and a selection of Colorado craft beer and handcrafted cocktails. The restaurant’s menu has expanded beyond pizza since the concept launched, with Italian-inspired dishes including Pepperoni Rolls, Chicken Parmesan and a Classic Caesar Salad.
Founded in Denver in 2014, Homegrown Tap & Dough was created as an approachable Italian restaurant concept inspired by Colorado’s landscapes and ingredients. Its restaurants incorporate pieces of Colorado’s history and mountain culture into their designs, including ski gondolas, stone fireplaces and other locally inspired details.
For the Colorado Springs location, that philosophy is taking on an especially personal meaning through the military memorabilia installation.
“We’re honored to be part of it,” Newlin said.
Homegrown Tap & Dough is part of Gastamo Group, which was founded in Denver in 2009 by chef-restaurateur Jean-Philippe Failyau. The group now operates 14 restaurants across the Denver metro area under five concepts: Homegrown Tap & Dough, Perdida, Park Burger, Lady Nomada and Park & Co.
The Colorado Springs location is expected to open this fall, with more details on the restaurant’s menu, design and grand opening events expected as the opening gets closer.
