Copper Cowboy, a Western-inspired restaurant and entertainment concept, is planning to open in San Diego’s Gaslamp Quarter in mid-January 2027, timed to coincide with rodeo season in the city.

Located at 820 Fifth Avenue, the concept will combine an American restaurant, a live-music saloon, and a custom cowboy hat shop under one roof. The project is expected to create approximately 40 to 50 jobs, according to the announcement.

Copper Cowboy’s concept comes from veteran restaurateur Alessandro Minutella and his partners, who are transforming the former Coyote Ugly space inside the historic Keating Hotel. Minutella’s other Gaslamp ventures include AKA and Zama.

The restaurant’s culinary program is being developed alongside chef James Montejano, with over 30 years of leadership in luxury hospitality, Michelin-recognized kitchens, and high-volume restaurant operations.

The name Copper Cowboy reflects the concept’s blend of Western culture and a contemporary setting. The team told What Now San Diego that “Copper” represents warmth, craftsmanship, and sophistication, while “Cowboy” evokes the authenticity and energy of the American West.

In an interview with San Diego Magazine, Minutella said he envisions a sophisticated yet unpretentious atmosphere for the project. “Nothing feels forced or pretentious. It’s great food, genuine hospitality, and an atmosphere that makes you want to stay. That’s what we’re bringing to Copper Cowboy, with a little San Diego flair.”

The saloon will feature a raised performance stage above the bar, with programming expected to include country and rock bands, DJs, and line dancing. During the day, the venue will offer dining, drinks, and sports viewing before shifting toward live entertainment in the evening.

The third component, Stets & Stone’s Hat Bar, will allow customers to customize cowboy hats while enjoying cocktails. The concept is led by Copper Cowboy partner Dustin Noblitt, CEO of HatCo, the company behind the Stetson and Resistol hat brands.

Looking ahead, the team told What Now San Diego that it sees potential to expand Copper Cowboy into other major markets, though its immediate focus remains establishing the San Diego location.
