Tin & Pig plans to open at 509 7th Avenue S. in Seattle’s Chinatown–International District, owner So Choi told What Now Seattle. The restaurant will occupy the former Baegopa space. An exact opening date has not been set, but Choi hopes to open by November.
“Our goal is to showcase our favorite (and difficult to find) Korean comfort food in a fun, social, and casual gastropub setting. We want to be the next go-to destination for Korean dining and a third space in Seattle,” she said.
Choi and her family opened the original Tin & Pig in Oakland’s Temescal neighborhood in mid-2016. They had lived in the South Bay for years and had been involved in Korean restaurants in Santa Clara’s Koreatown.
The neighborhood already had Korean restaurants, but Choi felt the family could offer dishes that were harder to find. Diners knew bibimbap and soondubu, she said, but had fewer places to go for pork hock or spicy gopchang.
“My family and I were confident in our food, and we wanted to feed the broader Bay Area our favorite dishes,” Choi said.
The family later handed the Oakland restaurant to a new owner, who continued using the original recipes but recently closed the business, she said.
For Seattle, Choi spent months searching for a space near Link light rail stations. She considered the University District and the Chinatown–International District.
“CID has been so incredibly welcoming, and we’re looking forward to contributing to our neighborhood with Korean comfort food,” she said.
The restaurant’s Seattle Instagram account lists Korean barbecue, fried chicken, and kimchi fried rice among the planned offerings. Choi said her father, Chef Jae Choi, has gained another decade of experience since the Oakland restaurant opened.
“We’re super excited to showcase some new dishes! But we’re also really excited to bring back our classic favorites from the Bay Area,” she said.
