Plans to launch Chop Shop, “Atlanta’s first farmer-owned” butcher shop, are moving forward in Edgewood.
Rusty Bowers, the owner of Pine Street Market, is partnering with Riverview Farms on the concept that was first (and quietly) announced early 2017.
A permit application this week was filed with the City of Atlanta to convert a 1,445-square-foot space, at 1366 Memorial Dr. SE, into Chop Shop.
Construction could cost $170,000, according to the filing.
“We are excited to still be centering Chop Shop around what we do best: raise the best heritage, humane pork, and beef at Riverview Farms and minimally process the meat to showcase the true flavor at Pine Street Market,” Bowers Wednesday told What Now Atlanta in an email.
Bowers and his team hope to feature “all of our favorite local food producers” including Doux South pickles, cheeses from Decimal Place Farm, oil from Oliver Farms, crackers from Georgia Sourdough Co., Banner Butter, chicken from Springer Mountain Farms, and others.
“We are working on creating a large patio to host meat and cheeses classes, celebrate up and coming chefs, and show off our favorite farmers to our new community.”
Chop Shop is expected to open early summer 2018.
