Carnitas El Güero Keeps Growing — Eyeing National Expansion

The popular and growing taqueria chain Carnitas El Güero will soon open a sixth Austin area spot at 2309 West Parmer Lane, as confirmed by Chef and Owner Gustavo Reyes.

“I took it upon myself to try all the carnitas spots in town,” Chef Reyes tells What Now Austin, describing their ascension in a crowded central Texas taco market. “They just don’t bring it like we do.”

As the restaurant’s name suggests, Reyes and his crew specialize in carnitas, a marinated slow-cooked pork taco often topped with cilantro and onion. Reyes’s recipe in particular comes straight from Michoacán.

When asked about his rationale for staking out an outpost on Parmer Lane, Reyes describes a moment of serendipity. 

“Well, the opportunity came up for a spot there. We didn’t choose them, they chose us. The owner of Carabao Express wanted to sell it and we simply ended up with it!” 

And what does the future hold for the striving young chain? 

“Given that we’re now a patented brand, we hope to expand nationwide.” 

No details have been released on Guero’s big moves. Until then, readers can try Reyes’s carnitas in Austin, San Antonio, Bastrop, and Mexico City.
