FOOD AND BEVERAGE MENU
Weissman brings a deeply technique-driven approach to an intentionally simple menu. He focuses on mastering technique, testing and refining everything from the cut and brine of the chicken to the structure of the dredge, the size and variety of the pickles, the way the buns are toasted and how the fries are cooked. Many of the recipes are deceptively simple, but the processes behind them are anything but. At the center of the menu is the signature Fried Chicken Sandwich, served at an accessible $11.95 price point with twice the amount of chicken than most fast food chains. After a rigorous testing process, Weissman chose to work exclusively with thighs for their flavor and texture, trimming each to create a consistent sandwich and repurposing the remaining pieces for the restaurant’s nuggets. The chicken is brined using a ratio Weissman has been refining for over a decade, then put through three stages that combines an aerated batter with a seasoned dredge to create multiple layers of crunch. Smoked spices woven throughout the brine, batter and dredge give the chicken its signature smoky flavor without ever smoking the chicken itself. The chicken is served on a butter toasted milk bun with his signature B&L sauce and dill pickles. For more heat, the Honey Dipped takes the entire piece of fried chicken and is dipped in a warm glaze made primarily from Texas wildflower honey with gochujang, Fresno chile and garlic. The menu also includes Fries, Chicken Nuggets and four house-made sauces: B&L Sauce, Honey Mustard, Yam Yum (gochujang honey) and Ranch.
Desserts include house-made soft serve and custards in rotating flavors such as Potato Chip Stracciatella, studded with pieces of chocolate and potato chips and finished with Maldon salt; Vanilla Bean & Olive Oil; and various seasonal offerings.
The beverage program keeps the focus close to home, with beers highlighting local breweries and Texas producers, including Live Oak and Lone Star, alongside a selection of Champagnes.
THE SPACE
Ben & Lynn’s occupies a restored 1920s bungalow whose existing character helped shape the restaurant’s design. Original hardwood floors, large windows and a light-filled front porch are paired with stainless steel countertops and simple finishes, balancing the warmth of the original home with the energy of a modern restaurant. Outside, a neon Ben & Lynn’s sign and additional seating extend the restaurant onto the block, reinforcing its feel as a welcoming neighborhood spot.
