A fresh taste of Vietnam is on its way to Billerica.
Mimi’s Bánh Mì is gearing up to open at 446 Boston Rd, Suite 2, in the O’Connor Hardware Plaza, according to a recent social media update from the business. “Trust Mi. You’re going to love it,” wrote owner Mi Giang Kul.
Mi told What Now Boston that the fast-casual, take-out-only eatery will serve up a vibrant spread of Vietnamese favorites, including cold cut bánh mì, slow-simmered beef pho, and fresh spring rolls packed with pork and shrimp. The goal? To honor the roots of Vietnamese cuisine while delivering a fresh, flavorful, and approachable modern experience.
“While our space has a clean, modern vibe—think fresh design, bright energy, and streamlined service—the heart of our kitchen stays true to Vietnamese culinary traditions,” Mi explained. “We take pride in slow-roasting our meats, hand-pickling our vegetables, and crafting our house-made sauces with recipes inspired by generations of Vietnamese home cooks. Every bite of our bánh mì reflects a deep respect for the original flavors that make this iconic sandwich so beloved around the world.”
Mimi’s Bánh Mì is slated to debut in late May or early June 2025. Once open, it will operate Monday through Saturday from 10 a.m. to 6 p.m., and Sundays from 10 a.m. to 4 p.m. The shop is currently hiring part-time positions, ideal for high school and college students.
“Whether you’re heading to work, meeting up with friends, or just craving something delicious on the go, Mimi’s is your new go-to spot,” said Mi. “We can’t wait to share a taste of Vietnam with you—one sandwich, one bowl, and one cup at a time.”
