According to a press release sent directly to What Now Chicago, PostBoy will soon debut in New Buffalo at 207 N Whittaker Street.

“Now, in summer 2024, Developer Ben Holland partners with Chef/Restaurateur James Galbraith, one the region’s most notable chefs, to present PostBoy, a chef-driven destination restaurant slated to open doors in New Buffalo, Michigan, at 207 N Whittaker Street—conveniently located just one foot off the town’s Amtrak rail stop and just 90 minutes from Chicago’s Loop.”

“Both partners have long-standing personal ties to the community; Holland spent his childhood summers in New Buffalo, and Galbraith currently presents some of the most exciting and progressive food in Southwest Michigan with his restaurants Houndstooth and Anemel in the nearby Benton Harbor Arts District.”

“A seasoned chef with 20 years of industry experience studying under some of Chicago’s most acclaimed chefs at celebrated restaurants such as Intro, Blackbird, BOKA, S.K.Y., Elske, Bellemore, and more, Galbraith aims to capture the quaint appeal of Harbor County with New American food that is fun as it is intentional alongside craft cocktails, local wines and beer.”

“Paying tribute to the duo’s affection for the region, PostBoy will provide multiple experiences under one roof including a chef-driven menu, as well as an expansive outdoor patio for the New Buffalo community and tourists to enjoy while spending time at the beloved beachside destination.”

“The team named the restaurant after the founder of New Buffalo Captain Wessel D. Whittaker’s ship Post Boy, which in 1834 crashed ashore near where the town is found standing today. The 10,000-square-foot home of the new restaurant, which formerly housed a Subway and Keller Williams Realty office, is currently undergoing a dramatic transformation to draw inspiration from a mix of coastal and Danish aesthetics with retro touches that are both nostalgic and comforting.”
