Chef Brad Bernstein to Open Gwynne at Cincinnati’s Fidelity Hotel

The new American restaurant will debut later this month inside the historic Gwynne Building, serving seasonal dishes inspired by Cincinnati's culinary heritage.

A new chef-driven dining destination is preparing to open in Downtown Cincinnati later this month, according to the Cincinnati Business Courier.

Executive Chef Brad Bernstein will debut Gwynne on July 28 inside the Fidelity Hotel at 602 Main St. The restaurant occupies the historic Gwynne Building, a former Procter & Gamble headquarters that has been transformed into a boutique hotel.

Gwynne is an American restaurant rooted in the culinary traditions of Cincinnati, with a seasonal menu highlighting regional ingredients and flavours. Guests can expect dishes such as fried green tomatoes with Appalachian sassafras cream, pork belly with sweet corn and Maque Choux, and sweet corn and tomato bisque. The beverage programme will also draw inspiration from Cincinnati’s neighbourhoods, architecture, riverfront and bourbon heritage.

In a news release, Bernstein mentioned to the publication above that the concept is deeply rooted in his Cincinnati upbringing and his family’s longstanding ties to the city’s culinary community. He described Gwynne as a celebration of the region’s ingredients, traditions and hospitality, with the goal of creating a restaurant that feels distinctly Cincinnati.

The restaurant will serve breakfast, lunch, dinner and weekend brunch. Dinner service will be available daily from 4 p.m. to 10 p.m., while breakfast will be served on weekdays from 6:30 a.m. to 11 a.m. Weekend brunch will run from 6:30 a.m. to 2 p.m.

Bernstein is well known in Cincinnati’s dining scene as the founder and chef of Red Feather Kitchen in Oakley, which closed in December 2024. He also previously operated Postmark in Clifton and later served as executive chef at Jeff Ruby’s Carlo & Johnny before launching Gwynne.

The restaurant is part of the newly opened Fidelity Hotel, operated by Texas-based New Waterloo. The hotel occupies the historic Gwynne Building, which served as Procter & Gamble’s headquarters from 1935 to 1956 before undergoing an $81.5 million redevelopment into a 165-room boutique property.
