According to public filings, Luna Grill Mediterranean Kitchen is planning a new location in Waxahachie, bringing the San Diego-based Mediterranean fast-casual chain to Ellis County. The restaurant is planned for 140 Bessie Coleman, Suite 100, with construction completion expected by May 2027.
Luna Grill specializes in Mediterranean-inspired dishes including flame-grilled kabobs, bowls, salads, pita wraps, plates, and family meals, with proteins marinated and cooked over an open flame.
The Waxahachie project follows a series of Luna Grill developments recently covered by What Now Dallas as the Mediterranean chain continues building its presence across North Texas.
The company recently opened its 60th restaurant on Gaston Avenue in Dallas, marking its ninth location in the Dallas-Fort Worth area. At the time, the company identified Dallas as a key market and pointed to continued opportunities across the region. Since then, Luna Grill has continued to add projects across the Metroplex.
In August, What Now Dallas reported on a planned location on Custer Road in McKinney, with construction targeted for completion in May 2027. A proposed restaurant on Preston Road in Celina was also reported in June.
Previous projects in Plano and Forney have also been covered by What Now Dallas, as the company continues building out its Texas presence. Company representatives have previously pointed to strong customer demand in the region and identified Texas as one of its strongest-performing markets.
