Chili Shack, a rapidly expanding restaurant chain, is opening its Brighton location on April 25, 2026. The opening marks a milestone for the brand as its first franchisee-owned location.
Chili Shack to Debut a Franchise Location in Brighton
Chili Shack is a Denver-based concept known for its Mexican-American dishes smothered in green chili. The brand is slated to open a new restaurant at 361 N. Main Street in Brighton.
The restaurant will be operated by Chili Shack’s longtime customer, Deanna Solano. Solano, a Southwest Denver native, plans to develop three locations. She is exploring sites in Littleton, Englewood, Lakewood, Columbine Valley, and surrounding communities.
The Brighton restaurant spans 1,100 square feet, featuring seats for 25 guests. The restaurant will operate from 8 a.m. to 8 p.m. daily, offering takeout and delivery options.
Solano expressed enthusiasm for bringing the Chili Shack franchise to the neighborhood. She stated, “I’ve always believed in what Chili Shack stands for—the incredible food, the vibrant culture, and the genuine sense of community that brings people together. Opening our doors this Saturday and introducing that experience to the Brighton community is incredibly exciting.”
Chili Shack founder Abraham Olivas described the opening as a significant step in the company’s expansion strategy. Speculation about the new Chili Shack location began in October 2025, when the company took over the space.
Journey of Chili Shack and Menu Highlights

Chili Shack opened its first location in Lakewood, Colorado, in 2020. The brand gained its fan following for customizable burritos, tacos, quesadillas, tortilla chips, loaded fries, and other street-style favorites.
The menu centers around the signature green chili, known for its blend of spice and tradition. Chili Shack also offers take-home items, including beans, rice, red and green chili, salsa, and chicharrones.
The brand has seven locations across the Denver metro area and downtown Las Vegas. It is aiming to open 100 new restaurants, targeting markets across Colorado, Arizona, California, Florida, Nevada, and New Mexico.
As Chili Shack brings its menu to a new audience, it reflects ongoing demand for casual dining concepts that prioritize bold flavors and convenience.
