A new craft brewery and full-service bar is taking root in Denver’s RiNo Art District.
Flower Shop Beer Werks will open at 3501 Delgany St, taking over the former home of The Shambles Tavern. The 900-square-foot space—previously occupied by Mockery Brewing before its 2023 closure—will soon be transformed into a greenery-filled, beer-forward oasis.
The concept marks the first brick-and-mortar brewery for owner-brewer Jacob Sabo, who is launching the venture alongside his wife and operations manager, Ava Olmstead. Together, the pair envisions a relaxed, welcoming “third space” grounded in community.
“With a focus on unique, though still approachable, beer styles and affordability, Flower Shop Beer Werks aims to create a calm third space that supports Denver communities and Colorado businesses,” the duo said in a statement to What Now Denver.
Affordability is central to the concept. According to a report from The Denver Post, beers are expected to land in the $5 to $6 range, with shots priced between $3 and $4 and wine pours around $5.
Brewing on Mockery’s former equipment, Sabo will offer a mix of signature staples—such as a Nordic ale and a lavender cream ale and porter—alongside more adventurous creations, including a strawberry habanero hazy and a cedarwood-infused IPA. The menu will also feature hop waters, seltzers, and nonalcoholic options.
On the food side, Flower Shop is partnering with the Hispanic Restaurant Association’s Heritage Flame BBQ in RiNo, bringing a collaborative element to the experience.
True to its name, the space itself will lean heavily into Flower Shop’s botanical identity, with hanging gardens, lush plants, and nature-forward design elements throughout.
