Olive & Finch Sets Sights on Sixth Location

The eatery will open in Golden Triangle.

Olive & Finch, a Denver-based cafe founded by chef Mary Nguyen, is set to open its sixth location later this year in the Golden Triangle neighborhood. The new outpost will set up shop at 1140 Bannock St., occupying a ground-floor space at the Dryden apartment complex, Denver Post reports.

It will be in a 4,200-square-foot shell that accommodates 113 diners, with a 460-square-foot patio with seating for an additional 30. An opening date is expected to be sometime towards the end of the year.

This news of the Golden Triangle location comes on the heels of the brand opening its Union Station outpost last month, as covered by What Now Denver. Olive & Finch is also working on another restaurant at the Denver Performing Arts Complex, which the publication also wrote about.

Nguyen is a self-taught chef and proud to run a minority and women-owned business. Her Nguyen’s culinary background includes leading roles at local restaurants such as The Beehive and Hapa Sushi. She later founded Vietnamese-French bistro Parallel Seventeen and pan-Asian concept Street Kitchen before starting Olive & Finch in 2013.
