Pepper Lunch is on its way to Houston. The brand is slated to open multiple locations across Austin and the Greater Houston area, according to RestaurantNews.com. Hot Palette America, Inc., the entity behind the brand, and its Chief Executive Officer, Troy Hooper, shared that the first opening is set to open in Missouri City early next year.
“The Houston expansion is not simply about adding another restaurant to the market. It is about introducing a proven global brand with a distinctive point of view: high-quality food, speed, affordability, and interaction in one format,” Hooper said in an interview with What Now Houston.
“For Houston, the timing is especially compelling. This is one of the country’s most diverse and adventurous food cities, a market where diners understand both value and flavor. Pepper Lunch fits that intersection: Japanese comfort food, bold sizzle, customizable meals, and an experience that gives guests something to talk about before they even take the first bite.”
Pepper Lunch brings the energy of Tokyo street-level dining into a modern Texas fast-casual setting; built for families, young professionals, food explorers, and anyone looking for a meal that feels fresh, fun, and personal.
“Every visit engages sight, sound, smell, and taste, which make a meal memorable and brings them back again and again. We are an experience-driven concept that guests can’t have at home,” Hooper said.
Described as DIY Teppanyaki, Pepper Lunch is a Japanese-born experiential fast-casual restaurant built around the theater of the sizzling iron plate. Founded in 1994 by chef and inventor Kunio Ichinose, who wanted to serve high-quality, affordable beef dishes to everyday diners without the need for expensive chefs. He designed the brand’s signature concept—allowing customers to finish cooking their own raw meals on superheated electromagnetic iron plates.
“Instead of receiving a finished dish from the kitchen, guests are served premium proteins, rice, vegetables, sauces, and seasonings on a patented 500-degree plate, then sizzle, stir, sauce, and savor the meal their way at the table. Guests are in and out in under 24 minutes for under $25,” Hopper explained.
At the helm of the Houston expansion is franchisee group Sizzling Hospitality. What now also reached out to the hospitality group’s Chief Business Officer, Bobby Shaw, but did not hear back by the time of this publication.
“Sizzling Hospitality is working with Palo Duro Commercial Partners, a retail-focused commercial real estate team with deep experience across Houston’s growth corridors, master-planned communities and emerging suburban trade areas,” Hooper said.
“For a brand like Pepper Lunch, that local insight matters. Palo Duro is not simply identifying available spaces; they are helping us understand where the brand can become part of the daily rhythm of a neighborhood.”
Bringing a sit-down quality experience with delicious food delivered at fast-casual speed is part of the brand’s identity. Some menu highlights include the Pepper Rice (Signature) – Thin-sliced steak, chicken, salmon, or tofu over rice with corn, margarine, and proprietary garlic soya sauce, Sizzling Steaks & Teppan Combos – Premium proteins finished on the hot plate, and Japanese Curry – Comfort-forward, umami-rich options.
There are currently more than 570 Pepper Lunch locations worldwide, across 17 different countries. The plan is to open 10-12 locations in the Greater Houston area over the next 3-4 years, including one in Springwoods Village and one in Sugar Land in Spring 2027.
“We are confident that we will bring sit-down quality, delivered at fast-casual speed, with the highest quality ingredients and a differentiated menu,” Hooper said.
Pepper Lunch is anticipated to open in Missouri City in March 2027.
