A new organic cafe and juicery is planned for West Palmdale, according to construction records, bringing an new breakfast and lunch concept to the Rancho Vista Plaza off Rancho Vista Blvd. and 30th Street. The project, called Organic Hour | Restore Cafe & Juicery, is being developed by Rachel Mae, wellness entrepreneur and owner of Restore Holistic Fitness & Wellness.
According to project information, the upcoming business will involve the tenant build-out of an existing 1,282-square-foot space. The project has an estimated construction value of $500,000, with a reported start date of October 1, 2026, and a targeted end date in March.
Mae has been sharing updates on social media regarding the coming venture, confirming that Organic Hour will be located in the same shopping center as Restore Holistic. It is expected to open early in the morning, giving customers an option for a healthy breakfast, as well as lunch.
The cafe is planned as a counter service establishment with indoor seating. Its menu is expected to center on organic food and drinks, including pressed juices, matcha, smoothies, and protein shakes and smoothies. Planned food offerings include scramble bowls, avocado toast, sandwiches, bowls and wraps, including gluten-free and dairy-free choices.
Organic Hour is part of a broader wellness business operated by Mae. Through Rachel Mae Wellness, she works virtually with clients around the world using functional lab testing, nutrition, and lifestyle-based programs. Her practice focuses on areas including gut, hormone, and mineral testing, as well as more extensive bloodwork. At Restore Holistic, she runs a women’s wellness studio, combining strength training, infrared sauna services, red light therapy, breathwork, and functional lab testing.
