Located in the former Nowon at 501 E 6th St., an upcoming Georgian bakery café called Thoné will pivot from café offerings to a natural wine bar focus in the evenings. The centerpiece of the East Village cafe will be fresh-baked traditional Georgian breads, such as cheese-filled urban kachapuri and bean-filled lobiani. Thoné will also offer Georgian-inspired small plates, shareable plates, sandwiches, and desserts. The beverage options will include coffee, espresso drinks, teas, juices, and smoothies.

The 14-seat café will also feature an international wine list that highlights Georgian natural wines. Other drink options include draft and canned beer, as well as non-alcoholic cocktails. According to a questionnaire filed with Community Board 3, the owners are considering a happy hour, and the cafe will close at midnight every night. An opening date has not been announced, and What Now New York has reached out for more information.
