Bird & Bao is a casual Asian-fusion restaurant located at 58B South Ocean Avenue in Patchogue. It specializes in creative bao buns and other Asian-inspired dishes. It was founded by Chef Conor Swanson, who built the concept around his interpretation of traditional steamed bao buns.
Bird & Bao announced the closure through social media, thanking customers, employees, and supporters. The post described the decision as the start of a ‘new chapter’ but did not provide additional details.
According to a Greater Long Island report, the restaurant opened in 2019. Swanson is a Long Island native. He is French Culinary Institute graduate.
Swanson developed Bird & Bao around steamed bao buns and spent years perfecting them while working in Brooklyn and Manhattan restaurants.
The restaurant gained popularity for its creative bao sandwiches. Its menu includes fillings such as chicken, pork, tofu, falafel, and more. Other popular offerings include five-spice fries, sesame noodz, crushed cucumber, crispy Brussels sprouts, and s’mores bao.
