A new neighborhood hotspot is coming to Manhattan’s West Village. Keepers, a new concept from the team behind Dandelion, will open on July 29, 2026. The idea is to bring craft cocktails, tavern-style bar pies, and vintage-inspired design under one roof.
West Village Welcomes a New Bar: Keepers
Keepers will open at 34 8th Ave in New York. The space is developed by the hospitality industry veterans Will Makris, Eytan Sugarman, Emily Pires, and Elena Hristu.
Following the opening of Dandelion in late 2025, Keepers marks another addition to the group’s New York City portfolio. Will Makris, a Zero Bond and Cucina Alba co-founder, and Eytan Sugarman, with a portfolio of White Horse Tavern and Made in New York Pizza, are leading the concept.
The neighborhood bar will offer intimate seating for 40 guests. It is inspired by the camaraderie of bartenders and tavern “keepers” from old New York.
The beverage program will be led by Ricky Dolinsky, formerly Beverage Director at Danny Meyer’s The View. The pizza menu is developed in collaboration with Louis Tomczak, whose experience includes Paulie Gee’s and Made in New York Pizza.
Inside Keepers’ Vintage-Inspired Design
Keepers is designed by Emily Pires and Elena Hristu of E&E Creative. The concept takes inspiration from the ‘70s and ‘80s Manhattan downtown vibe. Inside, the burnt orange accents, the exposed brick walls, vintage furnishings, and textured upholstery create a warm ambiance.
A 12-seat Cristallo Tropicale quartzite bar is the backbone of the room. Diners can enjoy vintage wood-grain speakers playing vinyl records at night. Photography celebrating New York’s creative past, including subtle references to artists such as Keith Haring, adds nostalgia while maintaining the energy of a modern neighborhood gathering place.

The cocktail menu at Keepers is focused on a wide range of Negronis. Guests will also be served classic cocktails and Italian-style creations. Signature cocktails feature the Strawberry Sbagliato, The White, Wok on the Wild Side, and Jaded in Japan.
Cocktail selection includes Watermelon Daiquiri, Biscotti Old Fashioned, and Cherry Vanilla Cream Paloma. Food items can also be paired with Italian wines, local beers, and traditional egg creams with and without alcohol.
For food offerings, Louis Tomczak’s bar pie program highlights thin, crispy pizzas. Menu favorites include the Classic NY Pie, Al Capone, Bargherita, and Brady Bunch Goes to Hawaii. White-style pies include Spartichoke, Vodka Chicky Parm, and Buffalo Soldier.
Diners can also find oven-charred wings with Buffalo, Garlic Knot Parmesan, and BBQ flavors, an Italian Chop Salad, and house-fried Chips & Dip at Keepers. Dessert options complete the menu offerings at Keepers.
Keepers is a new take on the neighborhood tavern. The concept will be open from Wednesday through Sunday. Hours are Wednesday and Thursday from 4 PM to 12 AM, Friday from 4 PM to 2 AM, and Saturday and Sunday from 4 PM to 12 AM.
