Capri is an authentic Mediterranean restaurant. According to the inspection report, the violations included:

  • A certified food safety manager was not present during the inspection. The certified food safety manager arrived later.
  • The report stated that a certified food safety employee must be on duty at all times when the food establishment is operating, handling, preparing, or serving non-prepackaged PHFs.
  • The inspection found bags of frozen calamari soaking in water inside the handwashing sink in the basement food preparation area. The PIC was advised that all sinks must be used appropriately. A food preparation sink should be used for soaking food items instead of a handwashing sink.
  • Inside the ice machine bin’s upper rim, a black residue and pink slime were noted. The PIC was instructed to discontinue the use of the ice machine and discard the ice until it is properly cleaned and sanitized.
  • A clean spray bottle of Lysol was stored on the same shelf as food equipment. The staff was ordered to remove or relocate it during the inspection.
  • Mouse droppings were observed in the warewashing area.

  • Residue buildup was observed on the exterior surfaces of the washing stations. The floor of the basement walk-in freezer also requires cleaning due to debris.
  • The report found condensation on the underside of an under-counter refrigerator in the food preparation area.
  • The restaurant must clean the floor in several areas due to debris, grease buildup, and mouse droppings. The areas include under and around the equipment in the warewashing area, food preparation area, bar areas, and storage areas.
  • Maintenance tools and equipment were not properly elevated in several areas, and in the basement storage area, openings in the ceiling were observed. Grease build-up was found around the hood in the food preparation area.
