Couve Carts Opening in Downtown Vancouver

Couve Carts will feature eight food trucks, an indoor taproom, and a play area for kids

A new food truck pod, Couve Carts, is in the works in Vancouver.

“The search for the best food trucks starts now,” said an Instagram post published by Andrey Bolokhovskiy back in September. “Comment your favorite FOOD TRUCK here in the Portland metro area.”

Thus began the Couve Carts story back in September, and after a series of further posts, Couve Carts published an update:

“Couve Carts coming November 2026!! Everyone has been asking for an update and we are finally moving forward!”

Most recently, on April 22, Bolokhonvskiy—who is heading up the project as CEO of Provision Group LLC—returned to share the following details:

“Not only will we have the best food carts in town,” Bolokhovskiy wrote in a post, “we also got: fire pits; play areas [for] dogs and your kids; [and a] tap room. What else would make this your go to spot for a night out?”

What Now reached out to Bolokhovskiy on Friday to ask about plans for the Couve Carts launch. Bolokhovskiy was not immediately available for comment.

Couve Carts is expected to occupy several lots at the intersection of West Evergreen Boulevard and Daniels Street, just north of Esther Short Park.
