La Tostada Loca Will Bring Seafood and Cold Cuts to Stockton

Owners Cristobal Tafolla and Alicia Gonzalez are targeting an opening in three to four weeks

La Tostada Loca is set to open at 1120 Waterloo Rd, Suite 2B, in Stockton, next to the Harbor Freight store along that stretch. Owner Cristobal Tafolla confirmed the news to What Now Sacramento, saying the restaurant is aiming to open in roughly three to four weeks, once interior work on the space wraps up.

The restaurant will focus on seafood and cold cuts. Tafolla said the concept blends traditional seafood dishes like ceviche, oysters, and octopus with classic Mexican cold snacks, including cueritos, pork ear, pig feet, ham, and head cheese, served alongside the seafood offerings. The space will be indoor seating only, with no outdoor patio.

The idea for the restaurant traces back to Alicia Gonzalez, Tafolla’s wife and the business’s main owner, whose family has run seafood restaurants for years under the name Mariscos Mazatlan, with locations in Sacramento, Lodi, Fresno, Modesto and Stockton. Tafolla brings his own experience to the venture as well, having spent 13 years running food trucks serving Mexican food like tacos, burritos, quesadillas, tortas, vampiros and mulitas.

After opening their first brick-and-mortar together, Tafolla told to What Now. “Anything is possible if you want it,”.
