A fresh, health-focused dining option is coming to Walnut Creek. Mixt is set to open a new location at 1101 Suite, California Avenue this July, bringing its signature lineup of seasonal salads and wholesome fare to the area, according to a social media post by the Lockehouse Retail Group.
Leslie Silverglide, co-founder of Mixt, said she is “excited for the debut in Walnut Creek.” She also confirmed that the new spot will sit next to Philz Coffee, in the location shared with PNC Bank.
Focused on what they call “nutrient-dense food”, Leslie and her husband Daniel Silverglide pride themselves on bringing together bold flavors and well-paired ingredients that satisfy the craving for freshness and delicious food, since their first unit, opened in 2005.
The salad selection pairs mixed greens with wholesome ingredients and a refined touch, as seen in the “Beetnik”, a vegetarian option featuring roasted golden beets, avocado, goat cheese, toasted walnuts, dried cranberries, caramelized fennel, fresh herbs, and a balsamic vinaigrette.
For the new Walnut Creek location, Leslie hints at menu updates that introduce bolder flavor combinations while staying true to the fresh, seasonal ingredients the brand is known for.
With 20 locations across California, Mixt is also a certified B Corporation that invested in the first “green built” restaurant in the country, according to Leslie. The restaurants also divert 99 percent of their waste from landfills through recycling and composting efforts, while sourcing ingredients from farms committed to sustainable and regenerative practices.
