Chef and food creator Matt Broussard plans to open his first restaurant in mid-October

Char the Chicken, a new counter-service restaurant from Seattle chef and food creator Matt Broussard, plans to open in mid-October at 1531 11th Ave. on Capitol Hill. Norman Wu of Conscious Hospitality Group confirmed the timeline to What Now Seattle. 

According to The Seattle Times, the kitchen will cook chickens on a rotisserie, finish them over a fire grill, and add chicken fat and a house spice blend. Customers can order a whole bird, a half, or a quarter, mainly for takeout. 

Another option, called the Mini Bucket, comes with fried chicken bites, queso fundido, sauce, and pickles. Sides include street corn, mac salad, cornbread pudding, charro beans, and rice seasoned with garlic and chicken fat. 

Broussard is developing the restaurant with Conscious Hospitality Group. Char will take over the former Mt. Joy space next door to Matcha Magic. Both brands are part of the company’s portfolio, along with Just Poké, SUGO Handroll Bar, Sano, HAPS Burgers, Catch by Just Poké, WOW WOW Lemonade, and Club Seltzer.

Before developing his online audience, Broussard spent six years working in Tom Douglas restaurant kitchens. He now has about eight million followers across Instagram, TikTok, and YouTube. He also recently published his first cookbook, Now We’re Cooking.
