Eggslut to Open at Westfield Southcenter Focused on ‘Quality, Consistency, Execution’

The new location will feature Eggslut’s signature breakfast sandwiches alongside additions, including Wagyu burgers and fries.

A popular chef-driven concept with a memorable name is set to open its second location in Washington.

Eggslut will debut at Westfield Southcenter in Tukwila this spring, with District Manager James Pham overseeing operations. This follows the recent opening of the Seattle Capitol Hill location, which debuted last fall.

Since launching as a food truck in Los Angeles in 2011, Eggslut has grown into a recognized brand with locations in California, Nevada, Georgia and Washington as well as in Australia, the United Kingdom and Japan. 

“Southcenter does cover some neighboring cities. We have Renton. We have Federal Way. It gives us a chance to bring in new guests into our store, while also being able to serve some current guests that we serve in Capitol Hill,” Pham told What Now Seattle.

Pham joined the brand for its simple approach to a good meal.

“Eggslut’s focus on elevating simple ingredients really resonated with me. It’s built on quality, consistency, execution, and that’s something I take pride in,” he said.

The menu centers on made-to-order sandwiches and sides, offering an elevated take on breakfast classics.

Fan-favorites include The Fairfax, a sandwich made with cage-free soft scrambled eggs and chives, cheddar cheese, caramelized onions and sriracha mayo served in a warm brioche bun, as well as The Slut, a cage-free coddled egg served over smooth potato purée, topped with gray salt and chives and accompanied by slices of baguette.

The Westfield Southcenter location will expand its menu to include Wagyu burgers and rosemary fries.

“This location specifically will have two new burgers. It’s going to be Wagyu Golden Smash and then there’s going to be Wagyu Royal burger,” Pham said.

The new location will also follow the same model as other Eggslut outposts.

“The design will stay pretty consistent with Eggslut’s brand. They aim for a clean, modern, focused, open, approachable feel. We’ll keep it the same. We want the space to reflect simplicity and quality of the food, while still fitting naturally within the Southcenter environment,” he said.

Pham is eager to open and get the team in place.

“The most exciting part with any new location is the team. We get to train a new team, we get to show them our brand standards—just seeing their progression day by day, it’s rewarding,” he said.
