A new bakery built around scoopable cookies is preparing to open in the heart of Toronto’s Entertainment District, according to blogTO.

Gooie plans to open at 106 John St. by the end of November 2026, although the team has not yet announced an exact opening date.

The concept goes straight to the molten center. Instead of traditional baked cookies, guests are served warm, freshly made, half-baked cookie dough by the scoop. They can add soft serve, sauces and toppings if they like.

Co-founder Maria Tsianos calls the concept the first scoop bar in the city. The business is owned and operated by Tsianos, her three siblings (Nicolette, Dimitria and Vasili), and their best friend, Katherine Noitsis.

According to Tsianos, the idea grew out of a lifetime of baking together and a shared soft spot for gooey, underbaked cookies.

The menu pairs one signature classic flavor that never changes with a rotating lineup of seasonal options, giving regulars a reason to keep coming back.

Gooie will also offer a full coffee program, featuring homemade syrups and flavor combinations the team describes as one of a kind, according to blogTO. The location puts the shop in the heart of downtown Toronto, in an area with heavy pedestrian traffic.
