The two incoming locations will be located in Northglenn and Castle Rock, with the latter location debuting at 6372 Promenade Parkway in the spring of 2023.
This location will be “the company’s biggest yet, with a 7,000-square-foot interior plus a 1,800-square-foot patio the company is building from the ground up. The Ramirezes are building a brewery complete with an 8-barrel brew house, a large lagering tank, and room for bottling and canning.”
The Northglenn location is expected to open in late October of this year at the former Jim ‘N Nick’s Bar-B-Q — 100 E 120th Ave Northglenn, CO 80233.
Brothers Luis and Daniel Ramirez were dubbed “Los Dos Potrillos” by their grandparents long before the first store was opened by their father Jose in Cenntenial in 2002. The term means “the two colts” in English, a call to a duo of strong yet wild pre-stallion ponies and a seemingly apt assessment of the brothers’ ambitious nature.
While the Northglenn location (Cocina y Cantina) will have a dining area, the brothers intend the fast-casual establishment to provide counter-service only. The Castle Rock brewery location, on the other hand, will be full-service.
In addition to free chips and salsa upon request, the Northglenn store will serve Los Dos’ 50 best-sellers, including homemade-tortilla tacos and chile Relleno. The store will also have a to-go window for diners hoping to feast and drink in the comfort of their own homes — that’s right, the Los Dos drive-thru will serve to-go booze. What’s more, the fast-growing concept will house a full bar “selling libations such as margaritas and Los Dos Potrillos original beer.”
“By the end of 2023, our goal is to have at least five [Cocina y Cantina] locations ready to go,” Luis told The Denver Post. “This is our first footprint. We’re anticipating it to get easier with each Cocina y Cantina going forward…We’re going to try and open one every 30 days. And if we can get more efficient, we’ll try to do one every two weeks.”
As Luis and Daniel hope to soon become “The Shake Shack of Mexican Food,” the brothers will expand as prolifically as possible, aiming at an eventual 200 locations.
