The food hall trend in Las Vegas shows no sign of fading away! The Venetian Resort has announced that it will be adding another food hall to the Las Vegas Strip’s growing collection: Via Via, scheduled to launch in mid-2025, according to coverage by the Las Vegas Review-Journal.
Eight tenants have been announced so far for the food hall, including Turkey and the Wolf, Ivan Ramen, All’Antico Vinaio, B.S. Taqueria, Close Company, and more. In the coming weeks, What Now will take a closer look at some of the concepts coming to Via Via.
Chosen by Food & Wine as one of the country’s best new restaurants back in the difficult year of 2020, Molly’s Rise and Shine is a second concept from New Orleans chef Mason Hereford opening next year at The Venetian’s upcoming Via Via Food Hall—this one focusing on breakfast.
“Hereford opened his second restaurant, Molly’s Rise and Shine, in 2019,” says a profile of the chef published on NewOrleans.com “This restaurant is a playful breakfast spot that serves American classics with a twist, such as the Grand Slam McMuffin and Sweet Potato Burrito. Both of his restaurants are casual with retro flare. It is clear that Hereford believes cooking and dining should be fun and creative.”
The menu features All-Star Classics like Roasted Carrot Yogurt (Nini’s granola, berries, other fun stuff, carrot marmalade, lemon zest, mint), Biscuits and Gravy (a half or whole biscuit swimming in herby miso pork gravy with a little black pepper and green onions), and the Country Ham Plate (the world’s best country ham [Lady Edison extra fancy country ham, the epitome of funk and a shining example of American terroir], baked cheese puffs, a jammy egg, via’s mom’s mustard, pickles, onions, greens, and garlic croutons).
