Acclaimed chef Julian Serrano is winding down another Las Vegas restaurant. Serrano closed Picasso at the Bellagio after nearly 26 years back in August, and now the chef is preparing to close Julian Serrano Tapas at Aria, says recent coverage by the Las Vegas Review-Journal.
“Over the years, the tapas-style restaurant has received industry acclaim for its cuisine and hospitality with awards such as a Four-Star rating from Forbes, Best of Award of Excellence from Wine Spectator and Best New Restaurant of the Year from Esquire, among other awards,” the RJ coverage said, citing a press release put out on Thursday.
You still have until February 1 to enjoy Serrano’s tapas flavors one last time, however. Or two last times. Or three last times.
“You can practically taste the love that Chef Julian Serrano puts into creating delectable interpretations of his native Spanish fare,” says the restaurant’s page on the Aria website. “Relish the comfort of Serrano ham alongside a creamy cheese platter. Or be adventurous and sample savory white anchovy fillets and black pig pinxto topped with perfectly caramelized onions. Whatever your personality, there’s a little something to suit it.”
It’s a beloved tapas spot that will be dearly missed. But the space isn’t expected to remain vacant long, the RJ coverage says, as a new food and beverage concept will open there in late 2025. Representatives have not yet responded to What Now’s request for details on what might be coming next.
“The culinary excellence and influence Chef Serrano brought to Aria for the past 15 years is a testament to his talent and unwavering work ethic,” said Aria President & COO Ayesha Molino in the cited press release. “He consistently led the restaurant and chef teams with professionalism, offering mentorship to all who worked alongside him, pushing each individual to deliver world-class hospitality to our guests.”
