Fons Empanadas Opening Plant-Based Cafe in West Loop

Fons, the world’s first vegan empanada shop, is expanding to a third location in West Loop, located at 605 W. Lake St.

The new restaurant is expected to open in early May 2022, according to Owner Daniel Briceno. The new location will move into the former home of Bang Chop Thai Kitchen, which closed down earlier this year. The new site will have a full dinner service with plant-based bowl options. Briceno is taking on a new venture for lunch and dinner, adding gluten-free options so everyone can enjoy their healthy food. Soon, the West Loop will have these signature stamped plant-based empanadas that made headlines just last year.

The company currently has one operating location at 2566 N Clark St. but plans to open a second Fons empanada shop in early April 2022, at the corner of Randolph and Wabash. This will be a collaboration store with a Chicago-based Açai Bowl company called Deep Purpl, where both brands will share the space. All three locations will feature the company’s various flavors, such as smoky mushroom, sweet potato chili, lumpia, ropa vieja, and Margherita.

When asked about his plans for further expansions into the city, Briceno tells What Now Chicago “We are continuously looking for new opportunities. Being a proud Chicago business, we want to be closer to the neighborhoods in the city for the convenience of all our fonslovers that have brought us to this point so far.”
